Ken Cooper

Picture this, it’s a warm sunny evening, you’re sat with a cold drink in your hand, under the shade of your aluminium pergola you bought from us at Burton Living, watching as everyone enjoys your brand new Outdoor Living space and you laugh to yourself, revelling in their envy but you smirk, this is yours and you couldn’t be happier.

But wait, there’s cries of “What’s for dessert?” And “I’m still hungry” and you find yourself wondering how can this possibly be, everyone has just enjoyed the finest cuts of meat from Magness Farms Butcher, which you cooked lovingly on your Kamado Joe grill but “It’s okay” you say to yourself, you’ve got one last trick up your sleeve.

One that’s sure to cement you in their minds and taste buds, it’s time to bring out the big guns and make a simple yet delicious dessert, one that will be sure to have you known as the barbecue King for future outdoor living parties to come.

People will look to you for your expertise, you will be a God amongst Men, you will be…

Okay, it’s time to wake up and snap back to reality!

It’s time for Grilled Peaches with Mascarpone and Honey!

You will need:

  • 4 ripe peaches.

  • 1 cup of mascarpone cheese.

  • 2 tablespoons of honey (Plus a little extra for drizzling).

  • 1 teaspoon of vanilla extract.

  • 1 tablespoon of lemon juice.

  • 1/4 teaspoon of ground cinnamon.

  • Fresh mint leaves (for garnish).

  • Optional: Roughly chopped, pecan nuts (for topping).

First before you get too excited and little too ahead of ourselves, you need to bring your trusty Kamado Joe to life and ensure such is ready for direct grilling (this means you will be using a simple grill grid and relying on open flames) and remember to preheat your Kamado Joe to a medium heat, this is roughly around around 175°C (350°F).

Secondly it’s time to prepare the star of our show: the all important peaches.

Make sure to wash the peaches carefully and slice them in half, making sure to remove any pits/stones from the center.

Next in a small bowl, mix the lemon juice and ground cinnamon together and once thoroughly mixed, gently brush the combined mixture onto the cut sides of the peaches.

Once your Kamado Joe is up to temperature, be sure to “burp” the grill before opening the dome, (this will prevent you from getting burnt and taking hot vapours to the face) carefully and steadily place the peach halves, cut side down, onto the grill grates, grilling for roughly about 3 - 4 minutes until grill marks appear and the peaches begin to soften.

Next, carefully, using tongs, flip the peaches onto skin side down and grill for another 2 - 3 minutes.

Now it’s time to prepare the mascarpone mixture which will help to bring this taste adventure to life.

Whilst the peaches continue to grill, take a bowl and mix the mascarpone cheese, 2 tablespoons of honey and vanilla extract until smooth.

Now it’s time to see the fruits of our labours has been worth it, carefully remove the peaches from the open grill and place them into a bowl or serving platter.

Next, spoon a healthy (you know what I mean.. ) dollop of the mascarpone mixture onto each peach half and drizzle some extra honey over the top and sprinkle over some chopped pecan nuts (this is optional, so don’t fret if you do not like nuts) and garnish with fresh mint leaves.

Now it’s that all important moment, the one you have been waiting for only ten minutes ago, it’s time to serve your Grilled Peaches with Mascarpone and Honey.

We highly recommend that you serve the grilled peaches warm for the best flavour, bringing out that wonderful smoky flavour from the grill, which combines beautifully with the light and sweet texture of the peaches.

The perfect dessert for the end of a perfect summer evening!

Enjoy!
